Bistro Alex takes its inspiration from some of the textures found in Texas. It balances contemporary design elements with comfort through a color palette of brown, blue and green, complemented with materials native to Texas – such as rough-hewn mesquite lumber that wrap the walls and ceiling – that become central features of the Houston fine dining space.

Bistro Alex, located on the second level of the Hotel Sorella, will reflect Chef Gonzalez’s rearing and culinary training with bold flavors in dishes such as Tasso Brined Pork Porterhouse ; Beef Short Rib “Osso Bucco” and Oysters; Orange Molasses Roasted Texas Quail; and Boudin Blanc Crusted Black Grouper with Five Mustard Sauce, all of which fit with his philosophy of combining perfect execution of straightforward cooking methods with accents of bold flavors to let the freshness and quality of his ingredients shine through for exquisite fine dining in Houston TX. 

An array of small plates and flatbreads like Duck & Gala with Caramelized Apples, Prosciutto, Duck Confit, Crackling Dust and Boucheron Cheese as well as creative entrée salads like Crab Caviar Salad served cold with a lemon Ravigote dipping sauce and Nueskes Bacon Crusted Oyster Salad with Baby Spinach, Point Reyes Blue Cheese, Red Onion Jam and Spiced Walnuts with Pepper Cane Jelly Vinaigrette are ideal for those wanting something lighter, will be Bistro Alex signatures.
